Monkfish cheeks are a true delicacy, they share a similar shape and texture to a scallop, and have a subtle and slightly sweet taste. The thin outer membrane that gives the monkfish cheek a shine, needs to be removed before cooking. - One way to eat this delicacy is to thinly batter or breadcrumb to create a different take on scampi. Alternatively, they taste brilliant simply pan-fried in butter and seasoned with black pepper.
