The Patagonian toothfish or also known as Chilean sea bass is native from the southern oceans around Antarctica. It is a cold-water fish famous worldwide for its fatty broad flaky flesh. It flesh contains a high level of Omega-3 fatty acids that are released when cooked.

Omega-3 fatty acids have become recognised for their health benefits. Issued from longline fishery in one of the most inhospitable islands in the world - known as Kerguelen and Crozet within French waters.

The fish is processed and thawed once brought onboard alive. It retains its freshness while preserving the smooth texture and unique taste of its flesh.
