Preparation

Ingredients:

250g      Bread flour

2g          Instant yeast

15g        Sugar

5g          Salt

20g        Egg

140g      Milk

25g        Butter

120g      Shred mozzarella cheese

 

Progression of the recipe:

Step 1:

Put instant yeast, and white sugar on one side of the flour, with salt on the other side. Add in egg and milk, combine the mixture and knead.

 

Step 2:

Knead until the dough becomes smooth, add in the butter bit by bit, and keep kneading until the dough turns smooth and elastic.

 

Step 3:

Shape the dough into a smooth ball, put it into a bowl, and cover it to avoid drying out. Set aside at room

temperature (at around 28-30°C) for the first fermentation of around 45-55 minutes.

 

Step 4:

Slightly flour the work surface. Invert the dough onto the work surface and gently pat out larger air bubbles. Cut the dough into 6 pieces, each of around 75g. Shape each dough into a smooth ball, cover it and leave it on the bench for around 10 minutes.

 

Step 5:

Slightly pat into a rectangular shape, add 15g cheese for each dough, and roll up the whole dough into an oval loaf. Final fermentation for around 45 minutes (at around 28-30°C). Preheat the oven to 180°C.

 

Step 6:

Brush with a thin layer of egg wash, and top with cheese. Bake for around 12 minutes at 180°C.
