Preparation
Ingredients (for 4 people):
For the financiers
- 65 g almond powder
- 30 g flour
- 125g icing sugar
- 110 g egg whites
- 80 g PRESIDENT butter
- 2 g Matcha tea
For the whipped cream :
- 150g of 35.1% PRESIDENT UHT cream
- 70g of GALBANI Mascarpone
- 30 g caster sugar
- 2 drops of essential oil of sweet mint
For the accompaniment (Optional):
- 80 g mango coulis
- 3 Kumquats
- 20 g sugar
- A few mint leaves
- ½ pomegranate
- 30 g blueberries
Progression of the recipe:
1. Prepare the financiers: to do this, preheat your oven to 180°C.
2. In the bowl of a mixer, mix the almond powder, flour and icing sugar. Once well mixed, add the egg whites to the first gear.
3.In a saucepan, melt the butter until you obtain a hazelnut butter.
4. Add the butter noisette to the mixture, then increase the speed of the mixer and mix for two minutes.
5. Reduce the speed and stir in the matcha tea.
6.Pour into the greased molds and bake for 30 minutes.
7.Whip the cream with a mixer and gently fold in the mascarpone. Add the sugar in a fine shower and perfume with the essential oil of sweet mint.
8. Pour into a pastry bag fitted with a Saint Honoré tip.
9. Prepare a syrup with the sugar and water and candy some thin slices of Kumquats for 4 to 5 minutes.
10. To serve, generously cover the top of your financiers with the whipped cream, then decorate with all the fruit and serve with the mango coulis.
Advice:
It is possible to make the financiers plain or flavored with vanilla. The cream can be plain or flavored with spices.
