Description
The meat is first covered in salt and left to rest for a few weeks concentrating the flavour of the pork. - After the salting process is complete, the pork legs are washed and left to dry-age and mature for 12 months. - It is this combination of salt, air and time that gives this Italian Prosciutto its distinctive dark red colour, creamy texture and delicate sweet taste.
