Composition
We have blended Trinitario beans from several of the farmers that we work with in Ben Tre and Tien Giang provinces in the Mekong Delta, to come up with a mild and balanced couverture chocolate suitable for many applications.
Ingredients: cacao liquor (54%), sugar (36%), cacao butter (10%)
Total cacao content: 62%
Total fat content: 39%
Flavor Profile
Mekong cacao beans are characterized by strong cacao and spice flavor, earthiness, and low acidity. This translates into a chocolate with a very mild and pleasant flavor profile characterized by round cacao and spice notes, notably cinnamon and vanilla, as well slight hints of grape, and fig.
