The chuck roll (aka boneless neck) is a deboned portion of the neck located in the Chuck primal that offers good flavor, but typically needs to be braised, stewed, or ground in order to become tender. The chuck roll is a large cut that is typically cut down before cooking – either into smaller roasts for braising, cubes for stew meat, or cheap tenderized cube or chuck steaks. It can also be ground into excellent 85% Lean/15% Fat ground beef. |
